If you are one of those people that believe it’s always a good thing to have some extra time to spend with your lover and you’re a hopeless romantic, you will just fall for this adorable dessert. What is so special about these cookies? First of all these are heart-shaped red sandwich cookies that taste like a red velvet cake. You should not panic about the heart-shape because they will result much easier and it is fun to do, more than you imagine.
You will need:
– 8 tbsp. unsalted butter, at room temperature;
– 2 cups all-purpose flour;
– 2 tbsp. cocoa powder;
– 1 cup light brown sugar, packed;
– 1 large egg;
– 1 tsp. vanilla extract;
– 1 oz. red food coloring;
– ½ tsp. baking powder;
– ¼ tsp. salt;
– ½ cup buttermilk, at room temperature.
– 8 oz. cream cheese;
– 5 tbsp. unsalted butter, at room temperature;
– 2½ cups confectioners’ sugar, sifted;
– 2 tsp. vanilla extract.
Directions: You can start by preheating the oven to a temperature of 375˚ F. Trace equally spaced hearts into parchment paper using a heart template, then set aside. Take the flour, baking pouder, cocoa powder and salt and whisk them together. Make a light and fluffy cream by beating the butter and brown sugar. When fluffy enough, add the egg and beat until incorporated, then add in the vanilla and beat until incorporated. Continue beating like this and add a third of the dry ingredients and finish with half of the buttermilk. Continue with the other half of the buttermilk and then blend in the final third of the dry ingredients. At the end, add the food coloring. Use a pastry bag with large plain round tip and pipe the batter inside the heart tracings. Bake for 7 to 9 minutes then allow them to cool for 10 minutes so that you can transfer them and leave them to cool completely.
Now move on to the cream cheese frosting: Beat the cream cheese and butter until combined and smooth. Add the vanilla extract. Gradually beat in the confectioner sugar and continue beating until smooth. Use a clean pastry bag fitted with a plain, round tip and fill up the cookies. When done, refrigerate. Enjoy!
