Loaded Potato & Buffalo Chicken Casserole - Recipe

For those moments when you wish to prepare something quick and tastefully enough, this recipe is more than suited for your attention. If you look carefully, you will notice that all the ingredients needed for this dish you might already have somewhere in your kitchen and it might not be needed to go to the store.

You will need:
– 1 1/2 tsp. salt;
– 1 tbs. paprika;
– 1 tbs. freshly ground pepper;
– 2 tbs. garlic powder;
– 6 tbs. hot sauce;
– 1/3 cup olive oil;
– 8-10 medium potatoes, cut into cubes;
– 2 lbs boneless, skinless chicken breasts, cut into cubes.
Topping:
– 1 c. crumbled bacon;
– 1 c. diced green onion;
– 2 c. cheese – you can use a mix.

Directions: Heat you oven to 500 F. Mix olive oil, garlic powder, hot sauce, pepper, paprika and salt together in a bowl, then add the potatoes and stir everything up. Grease a pan and put in the covered potatoes, but try to keep as much sauce mixture as possible. Put the pan with potatoes in the oven for 45 to 50 minutes but stir at every 10 minutes. Go back to the mixture in the bowl and put in the cubed chicken breast and stir everything. When the potatoes are done, take them out of the oven and lower the temperature too 400 F. Top the potatoes with the marinated chicken breast. Take a new bowl and make a cheese mix with green onion and top the marinated chicken and potatoes with it. Put everything to the oven for 15 more minutes or until the meat is cooked and everything looks bubbly and delicious. Make an extra hot sauce or dressing for serving it with.
