Chocolate Bunny Tree Easter Cake

You will need:
– 1 cup of water;
– 1/2 cup buttermilk;
– 1 tsp bicarbonate of (baking) soda;
– 1/2 tsp ground vanilla bean;
– 120 g butter;
– 2 cups caster sugar;
– 2 eggs;
– 2 cups plain sifted flour;
– 4 tbsp sifted cocoa.
– 1 cup icing sugar;
– 1/4 cup cocoa;
– 50 g room temperature butter;
– 250 g cheese cream.
Chocolate butter cream:
– 500 g room temperature butter;
– 2 cups icing sugar;
– 1/2 cup cocoa.
– 350 g fondant;
– desired food colorings and sugar decorations.

Directions: Preheat the oven to 150 C degrees. Start with the decorations and make a large ball out of two-thirds of the fondant that will make the rabbit’s bottom, then a small ball for the tail. Continue with the rabbit feet and make the toes using a scalpel or small knife. For the rabbit’s feet pads use a small amount of what is left of the fondant that you will paint in grey. Out of the remaining fondant you should make grass blades of various dimensions using a green colorant if needed. Leave the pieces to dry on a baking paper. Cakes: In a saucepan place the cocoa, butter and water and stir until everything is homogeneous. Next, in a different bowl place the bicarbonate, sugar, flour and the cocoa mixture and whisk until combined. Then, add in the eggs, vanilla and buttermilk while still whisking. Take four 20cm round cake tins and grease them lightly and divide the mixture previous mentioned into 4 equal parts. Bake for approximately 40 minutes then leave to cool down for at least 5 minutes before turning them onto wire racks for complete cooling. To form the borrow for your Easter bunny, place two of these cakes on top of each other and with a sharp knife cut a semi-circular 3cm deep, 7cm wide hole. Move on to the cream filling: Beat the butter and cheese for about 6 to 8 minutes until you get a pale cream and add the icing sugar with the cocoa and beat for another 7 minutes. It is now the time to place together the cakes together using the frosting cream to spread in between them. When done, refrigerate for an hour. Meanwhile, beat the butter until smooth and pale, add the cocoa and continue beating. Lower the beating speed and gradually add icing sugar. When done adding, increase the speed until everything is fluffy and holds shape. Take the cake from the refrigerator and cover it with the butter cream, then leave it to chill for 30 minutes. Coat cake and burrow freely with butter cream with vertical strokes, making it look like a tree. Add roots around the cakes base, place the bunny into the burrow, add the tail and feet. Use a paintbrush dipped in water for securing pieces together. Use the remaining decorations for the grass, flowers and Easter eggs to bring everything to life. This can easily make the centerpiece of your Easter dinner.
